Blue Corn Flour

$ 6.25

Our stone-ground organic Blue Corn Flour is a unique twist on an everyday kitchen staple. It is freshly milled and shipped straight to your door. It can be used for hoecakes, cornbread, spoon-bread, johnnycakes, cornmeal pancakes, and as a blend for gluten-free baking. Additionally, it works great as a dredge for frying, resulting in a uniformly crispy crust with a remarkable color.

Our Blue Corn Flour is whole-grain and vegan. It is also GMO-free and gluten-free, thus suitable for gluten-free kitchens. At The Congaree Milling Company, we don't process any wheat, barley, rye, or other grains associated with gluten allergies. Milling using our stone-burr mills keeps the milling temperature low, preserving the oils in the corn germ that carry the remarkable flavor of our organic blue corn.

All our corn products are milled from USDA Certified Organic domestic grain (grown in the USA).

Blue corn has an earthy, robust flavor, with a nuttiness and hints of umami. The superior quality of the blue corn we mill, combined with the freshness of the flour, takes the flavor of this product to new dimensions.

The same anthocyanins that make blueberries give blue corn its distinctive color, which is also good for you. Anthocyanins are a variety of flavonoid polyphenol phytonutrients strongly believed to have several health benefits. Among these benefits are improved brain health, heart health, reduced risk of cancer, reduced inflammation, improved blood sugar control, improved weight management, and improved brain function.

Give it a try in your kitchen for flavor and health!

We are also pleased to announce that Fundacion Tortilla was kind enough to include us in their directory of everything related to corn and nixtamal. Their primary focus is to preserve the diversity of indigenous corn culture. We are proud to be their allies.
