The Best Organic Polenta, Cornmeal, Grits, and Corn Flour You Can Buy

Nobody mills better maize products than us. Follow our guidelines for preparation and storage of our products, and you will be amazed at just how flavorful corn can be!

My Name is Ken DuBard, and I co-own the company with my business partner, Lawrence Burwell. It is our goal to provide the best organic maize products that can be bought on the market today. Organic corn is all we currently mill on our stone burr mill. We use a separate mill for processing our organic oats  Our freshly milled, unenriched, organic, whole-grain stone-ground products are processed in ways that are both ancient and modern, ways that utilize the inherent nutrition in maize while simultaneously enhancing flavor. This untapped potential makes The Congaree Milling Company unique in its vision.

We specialize in New and Old World milling techniques that date back to when corn was grown to be consumed by people.

Proudly Based in Columbia, South Carolina

The Congaree Milling Company is proudly based in Columbia, South Carolina, we have made civic duty and charitable work an integral part of our company.  A cause we have helped extensively is the Harvest Hope Food Bank, not only through food donations, but also through volunteering and fundraising. Another organization we have helped is Sustainable Midlands, through volunteering at numerous events, including recycling at the Five Points St. Patrick's Day Festival, and The Palmetto Tasty Tomato Festival.  We hope to add several other charities in the near future. These are not mere tax write-offs, but commitments of time that bring us close to our neighbors through volunteer work.

We are members of the South Carolina Speciality Foods Association http://www.scsfa.org/members

Sustainability is what we're about

We also utilize all available recycling opportunities at The Congaree Milling Company. Additionally, we compost kitchenwaste at our shared processing facility. These are tangible, real world steps toward resource conservation that not only reflect our values, but serve to diversify our business and eventually improve the "bottom line."

About Our Products

For the best flavor, freeze our products when you get them if you aren't going to cook them that day. They will stay fresh there for several months.

We mill certified organic corn and oats. Although we are not certified organic as producers, a certificate attesting to the USDA certification of our grain can be acquired by contacting us at info@TheCongareeMillingCompany.com

No other grist mill carries the variety of products that we provide to the retail consumer. We will give guidance through recipes and advice, but once you buy my stuff, you are welcome to experiment. However, realize that this is not enriched self-rising product designed for price and shelf-life.The best place to store our products is the freezer. Use your best judgement and common sense when using our stuff. We want you to enjoy every part of the experience of cooking our products!
